- Rice noodles
- Protein (chicken, shrimp, or tofu)

- Tamarind paste

Instructions
- Soak rice noodles in warm water for 20–30 minutes until soft; drain.
- In a bowl, mix tamarind paste, soy sauce, fish sauce, sugar, and chili powder; set aside.
- Heat oil in a skillet over medium heat; cook your chosen protein until golden brown. Remove from pan.
- In the same pan, scramble eggs until just set; remove.
- Add soaked noodles and sauce to the pan; toss on high heat for 2 minutes until heated through.
- Serve garnished with crushed peanuts, bean sprouts, cilantro, lime wedges, and chili flakes.
