Ingredients
- 2 large eggs
- 2 slices thick-cut bacon
- 1 slice cheddar cheese
- 1 brioche roll or English muffin
- 1 tablespoon unsalted butter
Instructions
- In a skillet over medium heat, cook bacon for 5-7 minutes until crispy. Drain on paper towels.
- In the same skillet, crack eggs into a bowl, whisk them together, and pour into the skillet. Cook on low heat while stirring gently until just set.
- Slice the bread rolls in half and lightly butter both sides. Toast the cut side down in another skillet until golden brown (about 2-3 minutes).
- On one half of each toasted roll, layer crispy bacon and scrambled eggs. Top with cheese while still warm.
- Cap each sandwich with the other half of the roll and serve immediately.
