Ingredients
- 3–4 boneless, skinless chicken breasts
- 4 cups fresh spinach
- 8 oz mushrooms (sliced)
- 1 cup heavy cream
- 3 cloves garlic (minced)
- 1/2 cup low-sodium chicken broth
- 1/2 cup grated Parmesan cheese
- Olive oil, salt, and pepper for seasoning
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper; cook until golden brown on both sides, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, sauté minced garlic and sliced mushrooms until soft.
- Stir in heavy cream and chicken broth; add Parmesan cheese and simmer until thickened.
- Add fresh spinach until wilted; return chicken to skillet to coat in sauce.
- Serve warm and enjoy!
