- 4 boneless, skinless chicken breasts
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup fresh spinach
- Olive oil, salt, and pepper
Instructions
- Heat olive oil in a skillet over medium heat. Season chicken breasts with salt and pepper; sear for 6-7 minutes per side until golden brown. Remove from skillet.
- In the same skillet, sauté minced garlic for one minute; add sun-dried tomatoes and Italian seasoning; cook for an additional two minutes.
- Slowly pour in heavy cream and stir to combine flavors. Add fresh spinach and let wilt slightly.
- Return chicken to the skillet and simmer everything together for another five minutes until the sauce thickens. Serve hot.
