Instructions
- Preheat your oven to 450°F (230°C).
- Boil the baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.
- Place the boiled potatoes on a parchment-lined baking sheet and gently smash each potato until flattened.
- Drizzle olive oil over the smashed potatoes, then sprinkle with garlic powder, salt, pepper, and chopped herbs.
- Roast in the oven for 25-30 minutes or until golden brown and crispy, flipping halfway through.
- Serve warm, garnished with extra herbs if desired.
