- 6 cups fresh romaine lettuce, chopped
- 1 cup freshly grated Parmesan cheese
- 1/2 cup homemade Caesar dressing
- 1 cup croutons
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Grill the Chicken: Preheat your grill or stovetop pan over medium heat. Season chicken with salt and pepper. Grill for 6-7 minutes on each side until golden brown and cooked through. Let rest before slicing.
- Prepare the Dressing: In a bowl, whisk together mayonnaise, lemon juice, anchovy paste (if using), minced garlic, and grated Parmesan until smooth.
- Toss Your Greens: In a large bowl, combine chopped romaine and drizzle with half of the dressing. Toss gently until well-coated.
- Add Croutons and Cheese: Mix in croutons and additional Parmesan according to preference.
- Combine Everything Together: Slice grilled chicken and place on top of dressed greens. Drizzle remaining dressing before serving.
