Instructions
- 1. Cook the boneless, skinless chicken breasts in boiling water for 15-20 minutes until fully cooked. Drain and let cool before shredding.
- 2. In a large bowl, combine shredded chicken, Greek yogurt, Dijon mustard, lemon juice, chopped celery, and red onion. Mix well until coated.
- 3. Season with salt and pepper to taste. Stir in fresh dill or parsley.
- 4. Serve chilled or at room temperature. Enjoy on its own or atop lettuce leaves or whole-grain bread.
