Instructions
- Preheat the oven to 425°F (220°C).
- Wash and dry the potatoes thoroughly. Slice them thinly, leaving about 1/4 inch at the bottom intact.
- Drizzle olive oil over the sliced potatoes, ensuring each layer gets coated with salt and pepper.
- Place the seasoned potatoes on a parchment-lined baking sheet and bake for 40-50 minutes until golden brown.
- Five minutes before they’re done, sprinkle chopped herbs and cheese if desired, then return to the oven until melted.
