- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/4 cup fresh lemon juice (about 2 lemons)
- Zest of one lemon
- Baking powder
- Salt
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a bowl, mix flour, sugar, and melted butter until crumbly; press into the bottom of the baking dish.
- Bake the crust for about 15 minutes until lightly golden.
- In another bowl, whisk together eggs, sugar, lemon juice, zest, and flour until smooth.
- Pour the lemon mixture over the baked crust and return to the oven; bake for another 20-25 minutes until set.
- Allow to cool completely before cutting into squares.
