- 2 medium-sized sweet potatoes
- 1 can (15 oz) black beans, rinsed
- 1 cup shredded sharp cheddar cheese
- ½ cup sour cream (or Greek yogurt)
- 2 green onions, sliced
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and dry the sweet potatoes; pierce each one multiple times with a fork.
- Place the sweet potatoes on the baking sheet and bake for 45-60 minutes until tender.
- While the potatoes bake, heat the rinsed black beans in a small saucepan over medium heat until warm.
- Once baked, slice open the sweet potatoes lengthwise and fluff the insides with a fork.
- Top each potato with warmed black beans, shredded cheese, and sour cream.
- Garnish with sliced green onions before serving.
