Ingredients
- 8 ounces fusilli or penne pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 cup Kalamata olives, pitted and sliced
- 1 red onion, finely chopped
- 1 bell pepper, diced
- 1 cup crumbled feta cheese
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Cook the pasta in boiling salted water according to package instructions until al dente. Drain and rinse under cold water.
- In a large bowl, combine cooled pasta with cherry tomatoes, cucumber, olives, red onion, bell pepper, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
- Pour dressing over the salad mixture and toss gently until evenly coated.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
