- 2 cups fresh spinach
- 3 large eggs
- 1/4 cup crumbled feta cheese
- 1 tablespoon olive oil or butter
- Salt and pepper to taste
Instructions
- Wash and chop the fresh spinach.
- Whisk the eggs with salt and pepper until well combined.
- In a non-stick skillet, heat olive oil or butter over medium heat. Sauté the spinach until wilted, about 2 minutes.
- Pour the whisked eggs over the spinach, gently swirling as it begins to set around the edges.
- Sprinkle crumbled feta on one half of the omelette. Once nearly cooked, fold the omelette in half and cook for an additional minute until golden brown.
- Slide onto a plate and serve warm.
