Ingredients
- 4 large bell peppers (red, yellow, or green)
- 1 pound lean ground turkey
- 1 cup cooked rice (brown or white)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup tomato sauce
- Salt and pepper to taste
- Optional spices: cumin or paprika
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Cut the tops off the bell peppers and remove seeds; place them in the baking dish.
- In a skillet over medium heat, sauté onion and garlic until fragrant. Add ground turkey and cook until browned (6-8 minutes). Stir in cooked rice and half of the tomato sauce.
- Fill each pepper generously with the turkey mixture and top with remaining tomato sauce.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until tops are golden.
- Serve warm, optionally drizzled with extra sauce.
