  • 4 large bell peppers (red, yellow, or green)
  • 1 pound lean ground turkey
  • 1 cup cooked rice (brown or white)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • Salt and pepper to taste
  • Optional spices: cumin or paprika

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut the tops off the bell peppers and remove seeds; place them in the baking dish.
  3. In a skillet over medium heat, sauté onion and garlic until fragrant. Add ground turkey and cook until browned (6-8 minutes). Stir in cooked rice and half of the tomato sauce.
  4. Fill each pepper generously with the turkey mixture and top with remaining tomato sauce.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until tops are golden.
