Ingredients
- 4 large bell peppers (red, yellow, or green)
- 1 lb ground turkey (or protein alternative)
- 1 cup cooked rice (or quinoa)
- 1 can (14.5 oz) diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Slice the tops off the bell peppers and remove the seeds; place them upright in the dish.
- In a skillet, sauté onions and garlic until translucent. Add ground turkey and cook until browned.
- In a bowl, mix cooked rice and diced tomatoes with the meat mixture; season with salt and pepper.
- Stuff each pepper generously with the filling.
- Cover with aluminum foil and bake for 30 minutes; then uncover and bake an additional 10-15 minutes until tops are golden.
