Ingredients

  • 1 can (5 oz) quality tuna packed in water
  • 2 whole wheat or spinach tortillas
  • 1 cup diced fresh vegetables (bell peppers, cucumbers, lettuce)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Drain the canned tuna thoroughly and place it in a mixing bowl.
  2. Add diced bell peppers, cucumbers, and any other desired vegetables to the bowl.
  3. Drizzle in olive oil, lemon juice, and Dijon mustard. Mix gently until well-combined.
  4. Season with salt and pepper to taste.
  5. Lay tortillas flat on a clean surface. Spoon the tuna mixture onto each tortilla without overstuffing.
  6. Fold in the sides of the tortilla and roll it tightly from one end to another.
  7. Cut each wrap diagonally in half for easy serving.
