- 1 can (5 oz) quality tuna packed in water
- 2 whole wheat or spinach tortillas
- 1 cup diced fresh vegetables (bell peppers, cucumbers, lettuce)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Drain the canned tuna thoroughly and place it in a mixing bowl.
- Add diced bell peppers, cucumbers, and any other desired vegetables to the bowl.
- Drizzle in olive oil, lemon juice, and Dijon mustard. Mix gently until well-combined.
- Season with salt and pepper to taste.
- Lay tortillas flat on a clean surface. Spoon the tuna mixture onto each tortilla without overstuffing.
- Fold in the sides of the tortilla and roll it tightly from one end to another.
- Cut each wrap diagonally in half for easy serving.
