- 8 oz high-quality white chocolate
- 1/2 cup heavy cream
- Zest of 2 organic lemons
- 1/4 cup freshly squeezed lemon juice
- Unsweetened cocoa powder for dusting
Instructions
- Chop the white chocolate and combine it with heavy cream in a saucepan over low heat until melted and smooth.
- Remove from heat and stir in lemon zest and juice until fully combined.
- Pour the mixture into a bowl, cover with plastic wrap, and chill in the refrigerator for 1-2 hours until firm.
- Scoop the chilled mixture onto parchment paper and roll into balls using your hands.
- Roll each truffle in cocoa powder until evenly coated.
- Store in an airtight container in the fridge for at least 30 minutes before serving.
