- 25 Oreos (for the crust)
- 4 tablespoons unsalted butter (melted)
- 8 oz cream cheese (room temperature)
- 1/2 cup granulated sugar
- 1 cup heavy whipping cream
- 1 teaspoon mint extract

Instructions
- Preheat your oven to 350°F (175°C).
- Crush the Oreos into fine crumbs, mix with melted butter, and press firmly into the bottom of an 8×8 inch pan.
- Beat cream cheese and sugar until smooth; add heavy whipping cream and mix until fluffy.
- Gradually stir in mint extract and optional food coloring until combined.
- Pour filling over cooled crust, smoothing evenly. Sprinkle with chocolate chips if desired.
- Bake for 30 minutes until set around edges. Cool before refrigerating for at least four hours.
