Ingredients

  • Long-grain rice (Basmati or Jasmine)
  • Onion
  • Garlic
  • Vegetable or chicken broth
  • Olive oil or butter
  • Cumin

Instructions

  1. Rinse 1 cup of long-grain rice under cold water until clear to remove excess starch.
  2. In a medium pot over medium heat, add 2 tablespoons of olive oil or butter. Sauté 1 chopped onion until translucent (about 5 minutes), then add 2 minced garlic cloves and cook for an additional minute.
  3. Add the rinsed rice and toast for about 3 minutes until slightly golden.
  4. Pour in 2 cups of low-sodium broth and stir in 1 teaspoon each of cumin and turmeric; bring to a boil then reduce heat to low.
  5. Cover and simmer for 15 minutes until liquid is absorbed. Remove from heat but keep covered for another 5 minutes.
