Delightfully creamy and simple to make, this no-bake cheesecake topped with fresh blackberries is the perfect dessert for any occasion.

Ingredients

  • 8 oz cream cheese (full-fat)
  • 1/2 cup granulated sugar
  • 1/2 cup sour cream (whole)
  • 1 cup fresh blackberries
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter (melted)
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter; press into the bottom of a 9-inch springform pan.
  2. Bake crust for 8-10 minutes until golden. Let cool.
  3. Beat cream cheese and sugar in a bowl until smooth. Add sour cream and vanilla, mixing well.
  4. Fold in half of the blackberries gently. Pour filling over cooled crust and top with remaining blackberries.
  5. Refrigerate for at least 4 hours or overnight to set before serving.
