Ingredients

  • 1 lb boneless chicken thighs
  • 1 cup bell peppers (mixed colors, chopped)
  • 1 cup zucchini (sliced)
  • 1 cup red onion (chunked)
  • 3 cloves garlic (minced)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine chicken thighs with olive oil, minced garlic, black pepper, and half of the soy sauce. Mix well.
  3. Add chopped bell peppers, zucchini, and red onion to the bowl along with the remaining soy sauce. Toss until vegetables are coated.
  4. Spread the mixture evenly in a baking dish and bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
  5. Remove from the oven and drizzle fresh lemon juice over the dish before serving.
