- 1 lb boneless chicken thighs
- 1 cup bell peppers (mixed colors, chopped)
- 1 cup zucchini (sliced)
- 1 cup red onion (chunked)
- 3 cloves garlic (minced)
- 3 tbsp low-sodium soy sauce
- 2 tbsp olive oil
- Juice of 1 lemon
- Black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine chicken thighs with olive oil, minced garlic, black pepper, and half of the soy sauce. Mix well.
- Add chopped bell peppers, zucchini, and red onion to the bowl along with the remaining soy sauce. Toss until vegetables are coated.
- Spread the mixture evenly in a baking dish and bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven and drizzle fresh lemon juice over the dish before serving.
