Instructions
- Prepare your ingredients by chopping the chicken into bite-sized pieces and thinly slicing the bell peppers and onion.
- In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and cook until golden brown and cooked through.
- Add sliced vegetables, garlic, cumin, and chili powder to the skillet. Sauté until the vegetables are tender and fragrant.
- Stir in the cooked rice until well combined with the chicken and vegetables.
- Squeeze fresh lime juice over the mixture for added brightness before serving. Garnish with cilantro if desired.
