Ingredients
- 2–3 boneless, skinless chicken breasts
- 2 cups shredded cheese (cheddar and mozzarella blend)
- Large flour tortillas
- 1 tablespoon olive oil
- Seasonings: cumin, paprika, salt, and pepper
Instructions
- Season chicken breasts with cumin, paprika, salt, and pepper. Heat olive oil in a skillet over medium heat and cook the chicken until no longer pink (approximately 6-7 minutes per side). Shred the cooked chicken.
- Lay one tortilla flat and sprinkle half of the shredded cheese on one half. Add shredded chicken and top with remaining cheese before folding the tortilla.
- Cook the folded quesadilla in the skillet for 3-4 minutes on each side until golden brown. Repeat with remaining tortillas.
- Slice into wedges and serve with salsa or guacamole.
