  • 34 boneless skinless chicken breasts
  • 1 cup plain yogurt
  • 2 tbsp garlic and ginger paste
  • 2 tbsp tikka masala spice mix
  • 1 can (14 oz) whole tomatoes
  • 1 cup coconut milk or heavy cream
  • Oil or ghee for cooking
  • Salt and pepper to taste

Instructions

  1. Marinate chicken in yogurt, garlic-ginger paste, and half of the tikka spice mix for at least 30 minutes.
  2. In a skillet, heat oil or ghee over medium heat; sauté finely chopped onions until golden brown.
  3. Stir in remaining spices, add canned tomatoes with salt and pepper, and simmer for 10-15 minutes until thickened.
  4. Add marinated chicken; cook thoroughly for about 15 minutes while stirring occasionally.
  5. Mix in coconut milk or heavy cream; let it cook for another 5 minutes.
  6. Garnish with fresh cilantro and serve hot with rice or naan.
