- 3–4 boneless skinless chicken breasts
- 1 cup plain yogurt
- 2 tbsp garlic and ginger paste
- 2 tbsp tikka masala spice mix
- 1 can (14 oz) whole tomatoes
- 1 cup coconut milk or heavy cream
- Oil or ghee for cooking
- Salt and pepper to taste
Instructions
- Marinate chicken in yogurt, garlic-ginger paste, and half of the tikka spice mix for at least 30 minutes.
- In a skillet, heat oil or ghee over medium heat; sauté finely chopped onions until golden brown.
- Stir in remaining spices, add canned tomatoes with salt and pepper, and simmer for 10-15 minutes until thickened.
- Add marinated chicken; cook thoroughly for about 15 minutes while stirring occasionally.
- Mix in coconut milk or heavy cream; let it cook for another 5 minutes.
- Garnish with fresh cilantro and serve hot with rice or naan.
