- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 16 oz softened cream cheese
- 1 cup sour cream
- 1 cup fresh strawberries, pureed
- 1 tsp vanilla extract
- 3 large eggs, room temperature
Instructions
- Preheat the oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press into a 9-inch springform pan.
- Bake the crust for 8-10 minutes until golden brown. Allow it to cool.
- In a large bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix until fully combined.
- Add eggs one at a time on low speed until just blended.
- Pour half of the cheesecake batter into the crust, dollop with strawberry puree, and gently swirl using a knife.
- Pour remaining batter over the swirled layer and bake for 50-60 minutes until set but slightly jiggly in the center. Turn off the oven and leave the door ajar for an hour.
- Chill overnight before serving for the best flavor.
