Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press into a 9-inch springform pan.
  2. Bake the crust for 8-10 minutes until golden brown. Allow it to cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix until fully combined.
  4. Add eggs one at a time on low speed until just blended.
  5. Pour half of the cheesecake batter into the crust, dollop with strawberry puree, and gently swirl using a knife.
  6. Pour remaining batter over the swirled layer and bake for 50-60 minutes until set but slightly jiggly in the center. Turn off the oven and leave the door ajar for an hour.
