Instructions
- Season chicken breasts with salt and pepper.
- In a large skillet over medium heat, sauté chopped onion in olive oil until translucent; add minced garlic and cook for an additional minute.
- Brown the seasoned chicken in the skillet until golden on both sides, then remove.
- Stir rinsed rice into the same skillet with chicken broth; bring to a simmer.
- After 10 minutes, mix in softened cream cheese and dried thyme until smooth.
- Return the chicken to the skillet, cover, and cook on low heat for another 10 minutes or until the rice is tender.
