- 3–4 boneless, skinless chicken breasts
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 2 tablespoons taco seasoning
- Salt and pepper to taste
- Corn tortillas
- Optional toppings: shredded cheese, lettuce, salsa, guacamole
Instructions
- Chop the onion and mince the garlic.
- Place chicken breasts at the bottom of the crockpot.
- Add chopped onions and minced garlic over the chicken.
- Pour in chicken broth; season with salt and pepper.
- Sprinkle taco seasoning over everything and rub it into the meat.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken shreds easily.
- Shred the chicken in the pot using two forks and serve on warmed tortillas with your favorite toppings.
