- 3–4 boneless, skinless chicken breasts
- 2 tablespoons fresh lemon juice

- 1 cup long-grain rice (jasmine or basmati)
- 2 tablespoons low-sodium soy sauce
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Trim excess fat from the chicken breasts and season with salt and pepper.
- Heat olive oil in a skillet over medium heat; sauté minced garlic until fragrant.
- Add the seasoned chicken to the skillet; cook approximately 5 minutes per side until golden brown.
- Pour fresh lemon juice over the cooked chicken and simmer for 1 minute.
- Prepare long-grain rice according to package instructions.
- Serve the chicken atop the fluffy rice, drizzling any remaining pan juices over it.
