- 1 cup green or brown lentils
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 6 cups low-sodium vegetable broth
- 1 tsp ground cumin
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
Instructions
- 1. Prep your veggies: Dice the onion, garlic, carrots, and celery.
- 2. Sauté aromatics: Heat olive oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic for another minute.
- 3. Add remaining veggies: Stir in carrots and celery; cook for about 3-4 minutes.
- 4. Combine lentils and spices: Add rinsed lentils, cumin, salt, pepper, and bay leaf. Stir to combine.
- 5. Pour in broth: Add vegetable broth and bring to a boil. Reduce heat and simmer until lentils are tender (30-40 minutes).
- 6. Taste & serve: Remove the bay leaf, adjust seasoning as needed, ladle into bowls, and enjoy!
