Ingredients

  • 1 cup green or brown lentils
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 6 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. 1. Prep your veggies: Dice the onion, garlic, carrots, and celery.
  2. 2. Sauté aromatics: Heat olive oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic for another minute.
  3. 3. Add remaining veggies: Stir in carrots and celery; cook for about 3-4 minutes.
  4. 4. Combine lentils and spices: Add rinsed lentils, cumin, salt, pepper, and bay leaf. Stir to combine.
  5. 5. Pour in broth: Add vegetable broth and bring to a boil. Reduce heat and simmer until lentils are tender (30-40 minutes).
  6. 6. Taste & serve: Remove the bay leaf, adjust seasoning as needed, ladle into bowls, and enjoy!
