- 3–4 boneless skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1 cup Italian seasoned breadcrumbs
- 2 large eggs
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Fresh parsley (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In one bowl, beat the eggs until frothy. In another bowl, mix breadcrumbs, grated Parmesan, salt, and pepper.
- Dip each chicken breast in the egg mixture, then coat with the breadcrumb mixture, pressing firmly.
- Place the coated chicken on a parchment-lined baking sheet and drizzle with olive oil.
- Bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
- Allow to rest before serving. Garnish with fresh parsley if desired.
