  • 34 boneless skinless chicken breasts
  • 1 cup freshly grated Parmesan cheese
  • 1 cup Italian seasoned breadcrumbs
  • 2 large eggs
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In one bowl, beat the eggs until frothy. In another bowl, mix breadcrumbs, grated Parmesan, salt, and pepper.
  3. Dip each chicken breast in the egg mixture, then coat with the breadcrumb mixture, pressing firmly.
  4. Place the coated chicken on a parchment-lined baking sheet and drizzle with olive oil.
  5. Bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  6. Allow to rest before serving. Garnish with fresh parsley if desired.
