Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine sliced chicken, bell peppers, and onion. Drizzle with olive oil and taco seasoning; toss until well coated.
- Spread the mixture evenly on the prepared baking sheet without overlapping pieces.
- Roast for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C) and veggies are tender.
- Remove from the oven and drizzle with lime juice before serving warm with tortillas and desired toppings.
