Ingredients
- 8 ounces spaghetti or linguine
- 1 pound large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 1 cup cherry tomatoes, halved
- 1/2 cup low-sodium chicken broth
- Fresh parsley for garnish
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large skillet over medium heat, add olive oil. Sauté minced garlic until fragrant.
- Add shrimp to the skillet; season with salt and pepper. Cook for 2-3 minutes per side until pink.
- Stir in cherry tomatoes and pour in chicken broth; simmer for about 5 minutes.
- Combine the cooked pasta with the shrimp mixture, adding reserved pasta water as needed for desired consistency.
- Toss well and garnish with fresh parsley before serving.
