- 4 skin-on salmon fillets
- 2 cups fresh spinach, chopped
- 8 oz cream cheese, softened
- 3 garlic cloves, minced
- 2 tbsp lemon juice
- 2 tbsp fresh dill or parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix chopped spinach, cream cheese, garlic, lemon juice, dill or parsley, salt, and pepper until well combined.
- Carefully slice each salmon fillet to create a pocket and stuff generously with the spinach mixture.
- Place the stuffed salmon on a lined baking sheet and bake for 15-20 minutes until golden brown and flaking easily with a fork.
- Allow to rest briefly before serving with your choice of sides.
