- 1 pound boneless chicken breast, cut into bite-sized pieces
- 1 cup bell peppers (red and green), chopped
- 1 cup pineapple chunks
- 1 onion, diced
- 2 cloves garlic, minced
- ½ cup sugar
- ½ cup vinegar (white or apple cider)
- ½ cup ketchup
- 2 tablespoons soy sauce
- Olive oil for cooking
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté onion until translucent.
- Add garlic and ginger; stir until fragrant.
- Add chicken and cook until golden brown on all sides.
- Mix in bell peppers and pineapple; stir for about five minutes.
- In a separate bowl, combine sugar, vinegar, ketchup, soy sauce, salt, and pepper to make the sauce.
- Pour the sauce over the chicken mixture and simmer for approximately ten minutes until thickened.
- Serve warm with steamed rice or noodles.
