Ingredients
- 3–4 boneless, skinless chicken breasts
- 1 large onion
- 2 bell peppers (red and green)
- 2 cups cooked rice (brown or white)
- 2 tablespoons fajita seasoning
- Juice of 1 lime
- Olive oil
Instructions
- Slice all vegetables and cut chicken into bite-sized pieces.
- Marinate the chicken with fajita seasoning and lime juice for at least 15 minutes.
- Heat olive oil in a skillet over medium heat. Sauté onions and bell peppers until tender (5-7 minutes).
- Push veggies aside; add marinated chicken and cook until no longer pink (8-10 minutes).
- Combine everything in the skillet, allowing flavors to meld for an additional minute.
- Serve hot over cooked rice, drizzling with extra lime juice if desired.
