- 1 cup fresh strawberries, diced
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
- Beat in the egg and vanilla extract until smooth and creamy.
- Fold in the softened cream cheese until well combined.
- In another bowl, whisk together flour and baking powder; gradually add to the wet mixture until just combined.
- Gently fold in diced strawberries, being careful not to crush them.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until edges are golden but centers remain soft. Allow cooling slightly before dusting with powdered sugar.
