Instructions

  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  3. Beat in the eggs one at a time, then mix in vanilla extract until smooth.
  4. In another bowl, whisk flour and baking soda together. Gradually add to wet ingredients, mixing on low speed until just combined.
  5. Gently fold in chocolate chips using a spatula.
  6. For the cheesecake filling, beat cream cheese with powdered sugar until creamy; mix in vanilla extract.
  7. Scoop half of the cookie dough onto prepared sheets, create an indention, fill with cheesecake mixture, and cover with more dough.
  8. Bake for 10-12 minutes or until edges are golden brown but centers remain soft. Cool on the sheet for 5 minutes before transferring to wire racks.
