- 3–4 ripe bananas
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup unsalted butter (melted)
- 2 large eggs
- 8 oz cream cheese (softened)
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). In a large bowl, mash bananas and mix in melted butter until smooth.
- In another bowl, whisk flour, sugar, baking powder, cinnamon, and salt. Gradually add to banana mixture, stirring until just combined.
- Add eggs and mix gently to avoid overmixing.
- Roll dough on a floured surface into a rectangle about ½-inch thick. Spread softened butter on top and sprinkle generously with cinnamon sugar.
- Roll tightly into a log and cut into 12 pieces using a sharp knife.
- Place rolls in a greased baking dish and bake for 25-30 minutes until golden brown.
- While baking, prepare frosting by beating cream cheese, powdered sugar, vanilla extract, and a splash of milk until smooth.
- Drizzle frosting over warm rolls and enjoy!
