- 4 boneless, skinless chicken breasts (about 1.5 lbs), sliced
- 2 medium fresh bell peppers (any color), chopped
- 1 large sweet onion, sliced
- 8 slices provolone cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Slice chicken into thin strips for quick cooking. Chop bell peppers and slice the onion.
- Heat olive oil in a large skillet over medium-high heat. Add chopped bell peppers and onions; sauté for 5-7 minutes until soft.
- Add the sliced chicken to the skillet along with garlic powder, salt, and pepper. Stir-fry until chicken is cooked through (about 8-10 minutes).
- Layer provolone cheese over the mixture and cover briefly until melted (2-3 minutes).
- Serve on hoagie rolls or crusty bread, and enjoy hot!
