Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, combine flour, baking soda, and salt. In another bowl, cream together butter, granulated sugar, brown sugar, and creamy peanut butter until fluffy.
- Beat in eggs one at a time and add vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Use a scoop to drop dough onto the baking sheets, spacing them two inches apart. Bake for 10-12 minutes or until edges are golden.
- Allow cookies to cool while preparing the filling by mixing powdered sugar and peanut butter until smooth; add milk if needed for consistency.
- Spread or pipe the filling onto half of the cookies and top with remaining cookies to create sandwiches.
