  • 1 cup halal cheese (mozzarella or cheddar)
  • 1 pound halal ground beef or chicken
  • 1 cup cooked rice (white or brown)
  • 1 cup tomato sauce
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
  2. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent (3-5 minutes).
  3. Add ground meat, cumin, and paprika; cook until browned. Stir in rice and tomato sauce until well combined.
  4. Stuff each pepper with the filling until slightly overflowing and place upright in a baking dish.
  5. Cover with foil and bake for 30 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly.
  6. Let cool slightly before serving with a fresh salad or crusty bread.
