- 4 medium bell peppers (any color)
- 1 cup halal cheese (mozzarella or cheddar)
- 1 pound halal ground beef or chicken
- 1 cup cooked rice (white or brown)
- 1 cup tomato sauce
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
- In a skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent (3-5 minutes).
- Add ground meat, cumin, and paprika; cook until browned. Stir in rice and tomato sauce until well combined.
- Stuff each pepper with the filling until slightly overflowing and place upright in a baking dish.
- Cover with foil and bake for 30 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly.
- Let cool slightly before serving with a fresh salad or crusty bread.
