Ingredients

  • Ladyfinger cookies
  • Freshly brewed espresso
  • Mascarpone cheese
  • Heavy cream
  • Granulated sugar
  • Unsweetened cocoa powder
  • Vanilla extract

Instructions

  1. Brew 1 cup of strong espresso and let it cool slightly. Mix in 2 tablespoons of sugar until dissolved.
  2. In a mixing bowl, combine 8 ounces of mascarpone with 1 cup of heavy cream and 1 teaspoon of vanilla extract; whip until soft peaks form.
  3. Quickly dip each ladyfinger into the coffee mix for 1 second per side and layer them in your dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers and the remaining mascarpone.
  5. Dust cocoa powder on top, cover, and refrigerate for at least 4 hours (preferably overnight) before serving.
