Ingredients
- 1 cup green or brown lentils
- 4 cups fresh spinach
- 1 medium onion, diced
- 2 medium carrots, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onions and carrots until softened (about 5 minutes).
- Add minced garlic and cook until fragrant (about 1 minute).
- Stir in rinsed lentils and vegetable broth; combine well.
- Bring to a boil, then reduce heat to low, cover the pot, and simmer for about 30 minutes until lentils are tender.
- Add fresh spinach during the last 5 minutes of cooking, stirring until wilted.
- Adjust seasoning with salt and pepper to taste before serving.
