  • 3 tablespoons olive oil
  • ground cumin
  • ground cinnamon
  • ground ginger
  • salt
  • pepper
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large tagine or Dutch oven over medium heat. Add onions and cook until translucent.
  2. Stir in garlic and cook until fragrant. Add meat and brown on all sides.
  3. Mix in spices (cumin, cinnamon, ginger), salt, and pepper; cook for two minutes.
  4. Stir in diced tomatoes, chickpeas, and dried apricots. Cover and reduce heat to low.
  5. Simmer for about an hour until the meat is tender.
