Ingredients
- 2 lbs lamb or chicken thighs, cut into chunks
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cups diced tomatoes (fresh or canned)
- 1 cup dried apricots, chopped
- 3 tablespoons olive oil
- ground cumin
- ground cinnamon
- ground ginger
- salt
- pepper
- Fresh cilantro or parsley for garnish
Instructions
- Heat olive oil in a large tagine or Dutch oven over medium heat. Add onions and cook until translucent.
- Stir in garlic and cook until fragrant. Add meat and brown on all sides.
- Mix in spices (cumin, cinnamon, ginger), salt, and pepper; cook for two minutes.
- Stir in diced tomatoes, chickpeas, and dried apricots. Cover and reduce heat to low.
- Simmer for about an hour until the meat is tender.
