- 6 ripe tomatoes, chopped

Instructions
- Wash and chop all vegetables: quarter the tomatoes, dice the cucumber, chop the bell pepper, finely chop the onion, and mince the garlic.
- In a blender or food processor, combine all chopped vegetables along with olive oil and red wine vinegar.
- Blend until smooth or pulse for a chunkier texture.
- Season with salt and pepper to taste; blend briefly to mix.
- Refrigerate for at least two hours before serving to enhance flavors.
- Serve chilled, garnished with fresh herbs or croutons as desired.
